Mashed potato puff pastry with cheese
Ingredients:
4 cups mashed potatoes (make sure they are already prepared and slightly cooled)
1 cup shredded cheddar cheese (or a mixture of cheddar and mozzarella)
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup sour cream (optional, for extra creaminess)
2 tablespoons melted butter
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 cup breadcrumbs (preferably panko for a crispier texture)
Chopped fresh parsley (optional, for garnish)Instructions:
Preheat your oven to 190°C. Line a baking tray with parchment paper or lightly grease it.
Make the mashed potatoes: If you don’t have mashed potatoes, you can make some quickly by boiling about 4 medium potatoes until tender (about 15 to 20 minutes), then mashing them with a little butter, milk, salt, and pepper. Let them cool slightly before using them in this recipe.
Combine ingredients: In a large bowl, combine mashed potatoes, shredded cheddar, Parmesan cheese, eggs, sour cream (if using), melted butter, garlic powder, onion powder, salt, and pepper. Blend until smooth and homogeneous.
Shape the puffs: Scoop spoonfuls of the puree and form small mounds (about 1 to 2 tablespoons each) with your hands or an ice cream scoop. You can make them as large or as small as you like, but make sure they’re consistent in size for even cooking.
Breadcrumb: Gently roll each puff pastry of mashed potatoes in the breadcrumbs to coat lightly. This will give them a crispy texture on the outside while keeping them chewy and melty on the inside.
