2️⃣ Prepare the cheese sauce

In a large skillet or saucepan, melt the butter over medium heat.
Add the flour and stir constantly for 1 to 2 minutes to obtain a lightly golden roux.

Pour in the milk gradually, while whisking, to avoid lumps.
Let it thicken for about 5 minutes, until you get a smooth and coating sauce.

Add half of the shredded cheddar, mix until totally melted.
Season with salt, pepper and a pinch of nutmeg.
Remove from heat and set aside.
