Hearty beef and vegetable soup

Step 2: Brown the remaining beef.
Set the first portion aside on a plate. Add 1/2 tablespoon of oil and brown the rest of the beef, then set it aside on the plate as well.

Step 3: Sauté the aromatics.
Add 1 tablespoon of oil to the empty pot. Sauté the onions, carrots and celery for 3 minutes, then add the garlic and cook for another 1 minute.

Step 4: Simmer the broth and beef.
Pour in the broth, diced tomatoes, browned beef, basil, oregano, and thyme. Season with salt and pepper. Bring to a boil, then lower the heat. Cover and simmer for 30 minutes, stirring occasionally.
