1 pork roll (about 1.5 to 2 kg)

6 to 8 yellow onions, minced
10 whole garlic cloves, in jackets (unpeeled)
1 sprig of thyme
2 bay leaves
15 cl dry
white wine 30 cl chicken or vegetable
stock Salt & freshly ground pepper

đ„ Step 1: Preparing the meat
Remove the wheel from the refrigerator 30 minutes before cooking so that it comes to room temperature.
In a large casserole dish (cast iron ideally), heat the olive oil and butter.
Brown the roll on all sides for 10 minutes. Season with salt and pepper.
đ§ Step 2: Preparation of the sauce
Remove the roll temporarily and add the onions to the casserole.
Melt them gently over medium heat for 10 to 15 minutes until golden brown.
Add the whole garlic cloves, thyme, bay leaf, then deglaze with the white wine.
Let the alcohol evaporate for 2 minutes before adding the broth.
