🛒 Ingredients (for 4 people)
For the gratin:
1 large cauliflower (or 2 small ones)
4 to 6 slices of white or smoked ham
100 g grated cheese (Gruyère, Emmental or mozzarella)
For the béchamel:
40 g butter
40 g flour
50 cl milk
Salt, pepper
A pinch of nutmeg (optional)

🥦 1. Prepare the cauliflower
Cut the cauliflower into florets and wash it.
Steam it or boil it in boiling salted water for 10 to 12 minutes. It should be tender but not too soft.
Drain it thoroughly and set aside.
🍖 2. Prepare the ham
Cut the ham slices in half.
If you like, you can roll a few florets in the slices for a beautiful presentation.
🍶 3. Make the béchamel
In a saucepan, melt the butter over low heat.
Add the flour all at once and mix well to obtain a roux.
Gradually pour in the milk, whisking to avoid lumps.
Let it thicken over low heat while stirring constantly.
Season with salt, pepper, and a pinch of nutmeg.
