A chef’s secret to a perfect egg salad

4 eggs

3 tbsp mayonnaise (or half mayo / half Greek yogurt)

1 tsp mild mustard (optional)

1 tsp lemon juice or mild vinegar

Salt, pepper

1 small shallot or red onion, very finely chopped

Chopped chives or parsley

Secret chef option ✨:

1 pinch of smoked paprika or mild curry

1 tsp finely chopped gherkin

To serve

2–3 very fresh croissants
