🍳 Step 2: Sear the meat
Heat the olive oil in a large casserole dish or sauté pan.
Brown the pieces of beef on all sides to brown them well. Set aside.
🧅 Step 3: Prepare the onions
In the same casserole, add a little oil if necessary.
Fry the sliced onions over medium heat until golden brown and tender.
Add the minced garlic at the end of cooking.
🫕 Step 4: Simmer
Return the meat with the onions to the casserole.
Add the broth, red wine (or more broth if you prefer), tomato paste, bay leaf, thyme and Worcestershire sauce.
Mix well, cover and simmer over low heat for 3 to 4 hours, stirring occasionally.
💡 Tip: For even more tender cooking, you can use a slow cooker for 8 hours at a low temperature.
🍽️ Step 5: Shred and serve
When the meat is very tender, shred it with two forks.
Mix it with the onion sauce.
Serve piping hot with potatoes, fresh pasta, rice or even in a sandwich.
💡
🌶️ For a spicier version, add a pinch of Espelette pepper or smoked paprika.
🍄 You can add mushrooms in strips 30 minutes before the end of cooking.
🥕 A garnish of sliced carrots will fit perfectly into the recipe.
