Salty tronchetto with marine flavours: crab, smoked salmon and prawns

10 cl of liquid
cream 1 tablespoon of mustard
1 tablespoon of chopped chives (or dill, according to your taste)
Salt and pepper to taste

1 lemon (zest for preparation and quarters for decoration) Step 1: Prepare the bottom of the log
Preheat the oven to 180 °C (gas mark 6).
Separate the egg whites from the yolks in two bowls.
In the bowl with the egg yolks, add the cream cheese, mustard and heavy cream. Whisk until smooth and homogeneous.

Beat the egg whites until stiff with a pinch of salt, then gently fold them into the previous dough with a spatula, lifting the dough to retain the air.
