Preheat the oven to 180°C (gas mark 6).
Peel and slice the apples. Butter and flour an oven dish, then place the apple slices in it.
In a bowl, whisk the eggs and sugar until light and fluffy.
Stir in the sifted cornstarch, then add the cream and vanilla (or cinnamon). Mix well.
Pour the batter over the apples in the dish.
Bake for 30 to 40 minutes, until the top is golden brown and the mixture is set. Let cool before serving.
