Easy and foolproof Provençal flan: Flavors of the South

Pour the mixture into a greased and floured gratin or cake tin (unless it is silicone). Smooth the surface.

Bake for 30 to 35 minutes. The flan should be golden brown and firm to the touch. To check if it’s cooked, insert a knife into the center: it should come out clean.

Allow to cool for a few minutes before serving.

6. Tasting and advice

Serve the Provençal flan hot, warm, or cold, accompanied by a green salad or raw vegetables. It is suitable as either a light main course or a starter.

Tip: This flan keeps very well in the refrigerator and even gains in flavor the next day, when the aromas have had time to develop.
