Season beef with salt, pepper, paprika, garlic powder, onion powder, and thyme.
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Sear beef until browned on all sides. Remove and set aside.
2. Build the Flavor
In the same pot, add chopped onion and cook 3–4 minutes until softened.
Add garlic and cook 30 seconds until fragrant.
Stir in tomato paste if using.
3. Braise
Return beef to the pot.
Pour in beef broth, scraping up browned bits.
Bring to a simmer, cover, and reduce heat to low.
Cook 2–2½ hours, stirring occasionally, until beef is tender.
4. Make the Mashed Potatoes
Boil potatoes in salted water until fork-tender (15–20 minutes).
Drain and mash with butter and warm milk.
Season with salt and pepper until creamy.
5. Serve
Spoon creamy mashed potatoes onto plates.
Top with tender braised beef and rich gravy.
