This dish, both sweet and savoury, combines the tenderness of ham with the fruity sweetness of pineapple and the colourful touch of candied cherries. The glaze, made with honey, brown sugar and mustard, forms a shiny, caramelized crust that envelops the meat in an irresistible fragrance. Served hot or cold, this ham is as beautiful to look at as it is delicious to taste.

The Origin of Glazed Ham
This dish has its roots in Anglo-Saxon cuisine, especially in the United States and the United Kingdom, where it is often prepared for Christmas or Easter. The combination of salted ham and sweet fruit symbolises the generosity and conviviality of festive meals. Today, this recipe has spread all over the world, seducing with its perfect balance of sweetness, acidity and richness.

Ingredients for 8 to 10 people
1 whole cooked ham (about 3 to 4 kg)
1 can sliced pineapple (or fresh pineapple)
12 red candied cherries
100 g brown sugar
3 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon whole cloves
1 teaspoon cinnamon (optional)
1 tablespoon melted butter
Preparation of the Ham
Step 1: Prepare the ham
Preheat the oven to 180°C. Remove the skin from the ham, leaving a thin layer of fat. Using a knife, cut the surface in a grid pattern. Prick a clove at each intersection. This step allows the glaze to penetrate well and flavors the meat.

Step 2: Prepare the frosting
In a small saucepan, combine the brown sugar, honey, mustard, vinegar and butter. Heat over low heat until the mixture is homogeneous and slightly syrupy. Add cinnamon if desired.
